The taste of the area, all year round.

You know that feeling of joy, when the lettuce on your plate has come straight from the garden? Our kitchen team serve everything that is growing in our garden and the nearby fields at any given moment. Everything else - like the meat, for example - comes from our own farm if possible and, if not, from small-scale farmers in the local area. The food we choose to make follows the rhythms of the season. And the tastes? Mouthwatering, fresh, and natural.

Passed with flying colours!

The Hirschen cuisine shines in the skies of culinary delights with a glowing green star! The Michelin Guide awarded us our star as all of our products come from our own farm and garden or from the immediate area, together with the fact that we are members of the Climate Neutrality Pact. We have also received the Michelin “Bib Gourmand” and awards from Falstaff und Gault Millau – if that’s not a good reason to celebrate, we don’t know what is!

The lady of the Kitchen: Maria Theresia Lutz.

She wields the biggest spoon in the Hirschen kitchen, and nobody know better than she does that the way to the heart is through the stomach! She sets her menus with superbly creative style, and purchases all her ingredients with the greatest of care - unless, of course, they are already growing in the garden. And talking of gardens: Maria Theresia Lutz absolutely adores fresh herbs and spices, and uses them to create flavour-packed, imaginative, reinterpretations of our beloved traditional cuisine.
