We especially like discovering traditional dishes in our recipe box.

We’ve select two especially delicious recipes for you, our dear guests.




Dandelion – Soft Ice Cream

  • 3 egg yolks / 1 egg
  • 80 g dandelion honey
  • lemons and orange peel, grated
  • 50 g fresh dandelion leaves, finely chopped
  • 2 tbsp rum
  • 300 m l whipped cream

Preparation:
Stir the egg yolks, egg and honey in a double boiler (approx. 80° C) until frothy. Allow to cool down and then gently fold in the remaining ingredients. Pour into the form and freeze at
- 18°C. Take out of the freezer in plenty of time before serving and decorate.




Topfennocken

  • 75g butter
  • 2 eggs
  • 300g “quark”
  • 2 tablespoons flour
  • 6 tablespoons whole grain flour
  • Salt

Preparation:
Prepare dough with all ingredients. Form dumplings and soak in salt water. Serve with butter!

Spinach Nocken (serves 5)

  • 750g spinach
  • 1 onion
  • 1 tablespoon butter
  • 2 eggs
  • 2 tablespoons milk
  • 12 tablespoons flour
  • Parsley
  • Nutmeg
  • Salt
  • Serve with parmesan and butter

Preparation:
Drain cooked spinach, chop onion and saute in butter until caramelized. Add spinach and mix well. Add parsley, beaten eggs and all other ingredients.

Cut out dumplings, put in boiling water and let simmer for 5-10 minutes. Take out dumpings and spread on preheated plate. Sprinkle with parmesan and butter.

Variation: Serve with tomato sugo instead of butter.
